Well...

Buffalo Wings from Buffalo NY

Servings 6

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 pounds chicken wings
3 tablespoons butter -- melted
3 tablespoons Worcestershire sauce
2 teaspoons catsup
2 cloves garlic -- mashed
1/2 teaspoon Tabasco

-----DIP-----
2/3 cup mayonnaise
1/3 cup sour cream
1/3 cup bleu cheese -- or gorgonzola

LOTS celery stalks/carrot sticks

Cut off tip of wing. Separate at joint. Place on wire rack in roasting pan.

Roast at 350 deg. for 1 1/2 hours. Turn once during cooking. Combine melted butter, Tabasco, Worcestershire, catsup, garlic and mix well in large bowl.

Place chicken in bowl and mix well. Crumble cheese coarsely and mix with other dip ingredients in separate bowl and serve with celery stalks and the wings.

You can adjust the "heat" with more or less Tabasco, but I'd stay pretty close to these specs.... Q

I generally buy wings out rather than making them myself. But, here's a suggestion if you want to do them baked instead of deep fried. This is good for 4 reasons....
1. you can do them with either wings or any other chicken cuts...boneless is fine too...
2. it takes less time and mess to prepare...
3. it's much less messy to eat, and...
4. there's much less fat.

One thing to note is that I much prefer a mix of flavors on my hot wings (even though I like them good and hot) rather than just the hot sauce.

Combine
1 pkg Shake & Bake Tangy Honey Glaze Mix
2 pkg of hot buffalo wing mix (powdered).

I put it in an old spice container with the sprinkler top, and the extra in a jar or ziplock bag. Then, whenever we want buffalo style chicken (wings or otherwise), I just coat the chicken in the mixture and bake it. It's nice and hot, but has a bit of a sweet tang to it as well. We really love the mixture and it's easy to do.
