Oh my, great topic, tough choices. But I'll try my best. I grew up on various platforms, and really do love that industry. I'm also including PC games, because they're also technically "video games" even if not console games. These represent games that either changed the face of games for future generations of games, or were just a hell of a lot of fun to play:
The Legend of Zelda [NES]
The game that changed it all. If I remember correctly, Zelda, in its gold box, was the first game ever that introduced a battery that could store character information "on" the cartridge itself. This game is probably the best game of all time, in terms of what it accomplished compared to the competition.
Final Fantasy [NES]
Another phenominal NES game. Squaresoft never really captured the fun of its first smash, I think. There's a lot of innocense involved in this game that just didn't transfer over to the later Final Fantasy games. In fact, the last three FF releases were little more but tedious strings of FMV and hackneyed storylines.
Baseball Stars [NES]
This game is amazing fun. It was one of the first sporting games in which you could make your own characters and power them up over their careers, using stats that noticably affected their every at bat, pitching ability, and fielding. I remember playing this game with a group of friends. And during the end of the season, it was far far greater than the various Super Bowls of our time, mostly because each game was so intense.
Ultima V [PC]
This game, along with Ultima IV, were epic in scale, and marvelous in excecution. Ultima IV was the first game in which the morality and actions of the player developed his avatar throughout the game. Back in the day before the internet, cheats, and walkthroughs, Ultima V took a friend of mine, his brother and myself a little over two full years to complete. It was epic. We had notebooks full of information on each town, person, located, keep, quest et al.
Everquest [PC]
I hate this game. I really do now. When I quit the game, I had a 45th level enchanter that I left behind, which took me two years to achieve. This game, as personal as it got, and as involved as it got, completely revolutionized this genre. It showed the world that massive online games could be mainstream. I can't count how many real life couples played this game side by side during the evenings, or how many people married after having met playing together in this game. Despite its flaws, EQ is a classic.
Herzog Zwei [Sega Genesis]
The grandfather of RTS games. Before C&C, before TA, before all the rest. This game was stressful. You were a mech that could morph back and forth from jet, to transport, to ground troop. Your objective was to conquer your opponent's base by taking over various small bases. I remember playing my friend for three hours straight at this game before. You had to mentally prepare yourself for it, because you had to be aware and active durin that entire time.
Pa Rappa the Rapper [PSX]
Don't know if the spelling of that is right, but man is that game fun. Not really groundbreaking in too many ways, just fun
Unreal Tournament [PC]
I hate FPS games with a passion. That being said, UT is the reason they are sometimes done right. Good graphics, connectibility, and fast response times. When I lived near Microsoft, I knew enough geeks in the area that LAN parties were feasible. God those were fun. You'd essentially turn your basement, living room, or what have you into a mesh of wire and howling, shouting twenty somethings. Those all nighters were grand.
Pool of Radiance [PC]
The original gold box game, not the buggy piece of garbage recently released. This game, much like the original Final Fantasy for the NES, started a whole series of great rpg's fit for the PC.
Adventure [Atari 2600]
Last, but not least, Adveture for the Atari. This game was fun. You were a little dot, running away from different colored dragons and other various dots. Simple, but fun.
