I just made this, because anyone who knows me well enough knows that I'm on a huge chipotle kick. It turned out pretty awesomely. I made it with mashed sweet potatoes and veggies.
Chipotle Crusted Pork Tenderloin
Ingredients:
- 1tsp Onion Powder
- 1tsp Garlic Powder
- 2tbsp chipotle chili powder (if you like it less hot, use 1 tbsp)
- 1/2 tsp salt
- 4tbsp brown sugar
- 2 pork tenderloins (about 1/2 or 3/4 pound)
1. Preheat grill to a medium high heat. Lightly oil grill grate. (I use olive oil and heat slowly. Olive oil is so good for you and adds a little bit of nice flavour)
2. In a large zip loc bag, combine onion powder, garlic powder, chili powder, salt and brown sugar. Toss in the tenderloins and shake it up until the meat is evenly coated. Then refrigerate for around 10-15 minutes.
3. Place meat on the grill and cook for about 20 minutes, rotating it every five minutes. Then remove from the heat, and let stand for about 5 - 10 minutes.
