Ah!
The Iconic Quesadilla
I start with whole, boneless chicken breast.
I first butterfly them and cut them into tiny squares.
Next I heat olive oil in a frying pan in preparation for the cut chicken. I also preheat the oven at 350 to bake finished product.
I then place the chicken cuts into a mixing bowl, season with a little bit of flour, paprika, salt, crushed pepper grounds, cumin, garlic powder, and basil.
Once coated, I add them to the hot oiled skillet.
As the chicken is browning, I slice an onion and red pepper into small pieces. I then add them to the pan, cooking everything until brown.
On a baking sheet, I lay out several large tortillas.
I add the chicken, onion, and pepper mix to half of the tortilla. I then top with a Mexican blend of shredded cheese. Subsequently, I fold the tortilla closed.
I then bake at 350 for 5 minutes. Flip, then bake 5 minutes more. Be sure to use PAM cooking spray or oil on your cooking sheets!
You can add whatever you like to the main ingredients or subtract any that you do not like 🙂
