It is quite simple, really, they produce oxygen that we need to breathe. Strange how so many people miss that.

That is certainly the most key element. Often that is certainly missed strangely enough. But they also convert the sun's energy into valuable resources #1 of which is, of course, food. But they also make drugs, fuel and many other chemicals we use. Plants are masters at chemical synthesis
