I just found this thread, and I have decided to share four recipes. I hope some of you will make these dishes, and eat them, and enjoy them. 🙂
Broccoli Soufflé
(Okay, I know it sounds disgusting -- BROCCOLI? Are you kidding me? -- but I'm serious! It's delicious! Hot or cold!
My mother found this recipe as a way to get her young kids to eat broccoli, and it WORKED, because there's a LOT of dairy products in the recipe as well!)
Ingredients:
2 packages frozen chopped broccoli
0.75 cup mayonnaise
0.5 cup Coffee Rich (or milk, cream, or half-and-half)
1 onion, chopped
1.5 tablespoons flour
3 tablespoons butter
3 eggs, beaten
dill to taste
salt and pepper to taste
Directions:
Cook frozen broccoli according to instructions.
Drain with a mesh strainer (or a colander) into a bowl.
Add Coffee Rich and mayonnaise to bowl, and put bowl into refrigerator.
In a skillet, sauté onions in butter, then remove from heat and add flour.
Remove bowl from refrigerator; be sure the broccoli mixture has cooled down.
Mix all ingredients together.
Pour into a greased 9" x 9" casserole.
Bake for 40 minutes at 350°.
Cut into squares.
May be served hot or cold, as a side dish or an appetizer.
