Total Anihilation: Kingdoms? I've never heard of that one. I only played the original and the Core contingency expansion. I really wish someone would pick up that licence again. As a matter of fact, it's funny you mentioned that game as I was raving about how much fun it was to play to a friend a few days ago. I should go and see if I can pick up an old copy from somebody. I really want to play that again.
As for Empire at war, I have to say that my favourite unit is the Slave 1. You are correct about the general tactics, though. It's pretty much defend, build up, send armada out to destroy, wash, rinse, repeat.
Meh. I'm more of a lightsaber man, myself. Nintendo hinted that their new Wii system might end up pumping out a Star Wars game. Which, with that new hand control, will allow a player to physically mimic sword movements. Just like a VR system.
Yeah, Kingdoms is fantasy style. There are four kindgoms lead by four different monarchs (they are all siblings to eachother), and they each have their own distinct units and structures.
Each army represents, through their units, one of the elements.
Aramon represents Earth, and it has the best land units.
Veruna represents Water, and has the best naval units.
Zhon represents Air, and has the best air force.
And Taros represents Fire, and is the most magical of the four.
All all balanced in their own way and have a little bit of everything, but each of them has distinct advantages over the others in one more more categories.
There is also a patch/upgrade you can download for added scenarios, units, and maps. It's called the Darien Crusades.
There was also an expansion pack called the Iron Plague, but it was never available when I bought this game because I bought it (unknowingly and ironically) soon after the company collapsed and stopped distribution.
The Iron Plague featured new units and a new army.
Here's a link. Note that the site is dead and not up to date, so don't bother downloading anything from it:

However, fans have kept the game semi-alive by creating new patches for it.

I'm a lightsaber man too, but that will only be worth it if the movements are realistic, are given fine control, and you're able to create your own fighting style or something and the system will sync with your movements.
I doubt it will be that advanced. It will probably only allow basic guard, strike, and thrust movements. While the idea will be revolutionary, the game itself will probably fall short somehow of the original concept.
